HONEY DOUGH FOR HAMANTASCHEN

4 cups sifted flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup shortening, softened
4 eggs
1 cup honey

Sift the flour, salt and baking powder into a bowl. Make a well in the center and place the shortening, eggs and honey in it. Mix until dough is formed. Roll out and cut into 4-inch squares. Place a heaping tablespoon of filling on each and fold over into a triangle, sealing the edges. Bake in a 350° oven 20 minutes or until browned. Makes about 3 dozen.


FILLING FOR HAMANTASCHEN

2 cups poppy seeds
1 cup milk
3/4 cup honey
1 teaspoon grated lemon rind
1/2 cup raisins

Grind the poppy seeds in a food processor. Combine with milk and honey. Cook over low heat, stirring frequently, until thick. Stir in the lemon rind and raisins. Cool before filling the dough.
