ZUCCHINI PANCAKES FOR PASSOVER

3 lbs zucchini
3 teas salt
3 C matzah meal
1/8 teas pepper
10 eggs

Grate zucchini in the food processor.  Squeeze out the liquid.  Add the rest of the ingredients. Mix well.  Form small pancakes by hand and drop into oil for frying.  Brown on bottom side, turn over, brown until done.

To freeze:  spread out on cookie sheet; place in freezer for 3 hours.  Remove and put pancakes in plastic bag. 

To reheat:  do not defrost.  Put on cookie sheet in 375° oven.  Brown on one side, turn over, brown on top.  Total time 15 to 20 minutes.  Watch carefully, they burn easily.
