SPINACH KUGEL FOR PASSOVER

1 lb. onions
1 cup broth
1 stalk celery
1 cup matzah meal
1/2 lb. carrots
salt, pepper
2 10 oz. pkgs. frozen chopped spinach 
oil
4 eggs

Chop onions, celery, and carrots coarsely in the food processor.  Sauté in oil until lightly browned.

Defrost spinach in microwave.  Squeeze the water out.  Beat eggs slightly. Add cooled spinach, cooled vegetables, and cooled broth to the eggs.  Mix well.  Add matzah meal and salt and pepper.  The mixture should be very moist.  Before baking, make a pancake and fry until brown in order to check the seasoning.  Add more salt and pepper as needed.

Grease baking dish.  Add mixture and bake at 350º about 45 minutes or until set and lightly browned.
