Incredibly wonderful kugel

 6 matzohs
4 tart apples, peeled and cut into eights or thinner: no chunks
1 ½ cup raisins
½ tsp. cinnamon
grated rind of ½ lemon
4-6 tbsp. orange juice
1 cup sugar
¼ cup margarine, melted
6 eggs, well beaten

Soak matzo in water until soft:  drain, and squeeze to purge as much liquid as possible.  Combine remaining ingredients.  Blend well.

Pour into a greased 9 x 13 pan.  Bake at 350 degrees F for 30 to 40 minutes.

JEFF’S NOTES:  This recipe serves 9-12 comfortably.  I dusted ½ cup of brown cane sugar (not included in the recipe) on top of the mix about 25 minutes into the baking period.  For an extra treat, substitute Ocean Spray Craisins (dried cranberries) for the raisins.
